NEW YORK: A new ice cream store specializing in a style of ice cream popularized in the Middle East has opened in New York City.

The Republic of Booza opened Monday in Brooklyn with a variety of flavors for the cold treat commonly found in the Levant. The New York Times reports booza has a peculiar texture — with elasticity similar to certain fresh cheeses that also makes it very resistant to melting.

The texture of booza is the result of a combination of ground roots of orchid plants and a pounding technique.

Owner Michael Sadler has said booza predates any other form of ice cream. His shop offers many different flavors, including strawberry, black walnut, salted caramel and saffron and peppercorn.
