Pyramid-shaped potato pie is a famous tasty meal in Baalbek and the Beqaa Valley, due to the presence of large potato fields in those areas.
These pies are both delicious and easy to make at home.
• 2 cups of flour
• 1 large spoon of instant yeast
• A sprinkle of salt
• A sprinkle of sugar
• A sprinkle of black pepper
• 2 large spoons of vegetable oil
• ¼ cup of warm water
• 1 tablespoon of margarine
• 1 large shredded potato
• 1 tomato cut into tiny pieces
• 1 onion cut into tiny pieces
First, to prepare the dough, mix flour with salt, sugar, and pepper in a large bowl.
Second, add the vegetable oil, margarine, and water.
Mix them together using a wooden spoon.
Prepare a countertop, table, or another stable surface for kneading the dough.
Work the dough with your hands, forming it into a ball, pressing it down and reshaping it.
Afterward, leave it in a bowl for about one hour.
Heat vegetable oil in a pot, and fry the onion until it’s golden in color.
Then, add salt and pepper along with the tomatoes and potatoes, while mixing them all together.
Let them cook for ten minutes.
Roll out the dough on a flat surface and cut it into small circles (around 10 cm each).
Add stuffing to the middle of the dough and close it in a triangular shape.
Deep fry the pie in vegetable oil and serve with yogurt on the side.
